How do I change the channel because there's too much traffic. I want to move to channel three because it's empty and I really want my Skype calls to stay connected.

You want to use only channel 1,6,11

Google inssider and survey around you for the best channel but 3 or other channel will overlap with it

What country are you in? As June suggested, in the USA you are limited to channels 1 to 11, and all other channels overlap with one or the other of 1, 6, and 11. Some other countries/regions can use 1 to 13 (eg. UK).

As June said, inSSIDer is a good free utility to help you scan and determine what's the best channel to use.
